第一步,盆里倒入適量冷水,撒入面粉攪勻,將雪梨掰掉梨把,放入面粉水里進(jìn)行搓洗,銀耳簡(jiǎn)單沖洗,放入冷水中泡發(fā),紅棗用溫水泡起來(lái),泡軟就可以了。
第二步,雪梨搓洗完,給它沖干凈,先切成片,去掉里面的核,再把梨切成小塊。泡發(fā)的銀耳掐掉根蒂,洗凈撕成小片,紅棗洗凈撕成對(duì)半,取出棗核,黃冰糖搗碎。
第三步,鍋里倒入1000毫升清水,連同銀耳一起放入,開(kāi)大火滾煮,煮開(kāi)之后倒入梨塊,蓋上鍋蓋轉(zhuǎn)中小火,燉20分鐘。
第四步,等到梨塊和銀耳燉熟透,放入黃冰糖繼續(xù)煮3分鐘,冰糖融化后,放入紅棗,枸杞燉10分鐘分鐘即可關(guān)火,起鍋將燉好的湯盛出來(lái)就做好了。
操作貼士:
雪梨的皮用來(lái)燉湯更有營(yíng)養(yǎng)價(jià)值,因此不用去掉,清洗時(shí)用面粉水把外皮搓一搓,這樣很容易就把附著在梨皮上的污濁搓掉,更干凈一些。
制作這道湯的清水要一次性加足,中途不要再加水了,不然會(huì)稀釋掉整鍋湯的味道,變得寡淡。
