三、怎么挑到好木耳
挑木耳看 “干燥度” 和 “純凈度”,直接影響口感:
看顏色:優(yōu)質(zhì)干木耳是自然黑褐色或暗黑色,有光澤,沒(méi)霉點(diǎn)、白斑;顏色過(guò)黑發(fā)亮(可能染色)或發(fā)灰發(fā)暗(可能受潮)的別買(mǎi)。摸質(zhì)感:干木耳手感干燥、輕盈,捏著不結(jié)塊、不發(fā)黏;發(fā)潮、黏糊糊的是儲(chǔ)存不好,容易壞。試泡發(fā):好木耳泡發(fā)后膨脹明顯,肉質(zhì)厚實(shí)有彈性,沒(méi)硬根、雜質(zhì);泡發(fā)后軟爛沒(méi)韌性、有怪味的,品質(zhì)差??措s質(zhì):優(yōu)質(zhì)木耳干凈無(wú)泥沙、碎屑,葉片完整;碎渣多、帶硬梗的,加工粗糙,處理起來(lái)麻煩。
