第二步,開火燒熱油鍋,倒油燒至6成熱,將雞蛋下鍋前再攪一攪,攪好倒入熱油中,用大火翻炒至蛋液凝固,用筷子把蛋塊快速攪散,攪成小碎塊,先關(guān)火盛出。
第三步,油鍋里繼續(xù)添加適量油,開火把油溫?zé)?成熱,放入剩下的黃豆醬炒開,炒上大約2分鐘,再放入蔥末一起炒出香味。
第四步,接著倒入豆角丁,這時候把火候調(diào)大,用大火將豆角翻炒3分鐘左右,豆角炒到變軟半熟,炒上色為止。
第五步,沿著鍋邊轉(zhuǎn)圈倒入少量清水,水位線不要沒過豆角,然后蓋上鍋蓋,轉(zhuǎn)小火將豆角燜個3至5分鐘,燜到熟透入味就可以。
第六步,等鍋底湯水快收干時,倒入事先炒好的雞蛋,加入雞精,白糖,翻炒均勻后即可關(guān)火,起鍋將炒好的菜盛出就做好了。
操作貼士:
雞蛋里先加少許黃豆醬炒一下,是為了能夠使雞蛋更好地入味,但是雞蛋本身吃鹽,所以黃豆醬的量不能放多了,否則雞蛋味道會偏咸。
倒入的清水不能太多,沒過豆角三分之二的水量就行,水倒入太多的話,反而會沖淡整道菜的醬香味,而且也不太容易把湯汁收干。
這道菜無需放鹽,因為黃豆醬本身的咸度是足夠的,但要是食材用量多的話,大家酌情放入黃豆醬就可以了。
