第二步,黑木耳泡發(fā)后,去蒂洗凈,撕成小木耳塊,白玉菇洗凈去根,切成三段,午餐肉直接切成小片,大蒜去皮切成蒜末。
第三步,開大火燒熱油鍋,鍋里倒油燒熱至3成,轉(zhuǎn)成小火先放入蒜末炒個半分鐘,再放入蝦皮翻炒,將蒜末和蝦皮一起炒出香味。
第四步,接著放入絲瓜,木耳翻炒2分鐘,炒的時候把火候調(diào)大,絲瓜和木耳炒軟,炒到半熟就行。
第五步,往鍋里添100毫升清水,水位不超過食材的1/3處,倒完再放入午餐肉,白玉菇攪勻,蓋上鍋蓋大火燒上5分鐘。
第六步,待食材全部燒熟,加雞精,鹽調(diào)味,攪拌均勻后用大火把湯汁收一收,即可關(guān)火,起鍋將燒好的菜盛出就可以了。
操作貼士:
這道菜使用的調(diào)料并不多,味道看似清淡,但吃起來鮮香味是很濃的,關(guān)鍵步驟在于炒蝦皮和蒜末,一定要把這兩樣多炒上一會,幫助提升整道菜的味道。
絲瓜本身也會出水,所以燒菜時倒入的水量不要太多,方便后續(xù)收汁,否則水太多的話,也會把菜的味道沖淡。
